Bulgur Feta and Olive Salad

Ingredients
- 1 cup bulgur
- 2 1⁄2 cups boiling water
- 1 cup carrot, shredded
- 1 cup fennel, thinly sliced
- 1⁄2 cup kalamata olive, pitted
- 1⁄2 cup pistachios, shelled
- 1 cup feta cheese, crumbled
- 2 tablespoons red wine vinegar
- 1⁄4 cup olive oil
- 1⁄2 cup fresh parsley, chopped
- 1⁄4 cup fresh oregano, chopped
Directions
- In a medium bowl, combine bulgur and boiling water. Let stand for 15 to 20 minutes or until bulgur is tender. Pour off any remaining water.
- Add remaining ingredients and toss to combine.
