Buffalo Chicken Sloppy Joes - Healthier

Roll up your sleeves and grab a bunch of napkins. This is messy but oh so yummy! Get your spicy Buffalo kick in a healthier and fun way! Serve for lunch or dinner. Serves: 4

Ingredients

  • 1  teaspoon canola oil
  • 12 medium onion, chopped fine (about 1/2 c)
  • 12 cup  grated carrot, about 1 large carrot
  • 1  lb  lean  ground chicken breast
  • 12 teaspoon  Montreal chicken seasoning, my addition
  • 18 teaspoon garlic granules, my addition
  • 12 teaspoon salt
  • 18 teaspoon pepper
  • 8  ounces tomato sauce
  • 14-12 cup  hot sauce, I used 1/2 C Frank's Red Hot (to taste)
  • 12 cup  blue cheese dressing, your favorite blue cheese dressing with crumbled blue cheese I suggest The Ultimate Creamy Blue Cheese Dressing & Dip
  • 4  lettuce leaves, for garnish
  • 4  soft  rolls

Directions

  1. Heat oil in a saute pan over medium heat.
  2. Add onions and carrots. Cook until onions become translucent and carrots are softening, about 5-6 minutes.
  3. Add the ground chicken, and cook until done, sprinkle in the salt & pepper & dry seasonings, breaking up the meat as it cooks.
  4. Stir in the tomato sauce and hot sauce; simmer for 20-30 minutes.
  5. Add a lettuce leaf to your roll, then spoon on the chicken mixture. Top with blue cheese dressing or crumbles for serving.
  6. Serve with oven fries or onion rings. YUM!
