Brown Rice Salad

Ingredients
- 2 cups brown rice
- 1⁄2 cup Kikkoman soy sauce
Chop
- 3 spring onions
- 1 red pepper
- 1⁄2 medium onion
Roast
- 1 cup peanuts
- 1⁄2 cup sunflower seeds
mix with
- 1⁄2 cup raisins
Dressing
- 3⁄4 cup olive oil
- 1 teaspoon grated lemon rind
- 1 lemon, juice of
- 1 crushed garlic
- 1 teaspoon grated gingerroot
Directions
- Boil the Brown rice (firm to bite, not soft).
- then soak in Soy Sauce for at least 2 hours (the longer the better).
- Add the spring onions, red pepper, onion, and roasted peanuts and sunflower seeds with the raiins mixed inches.
- Whisk all the ingredients of the dressing with a fork in a cup or jug.
- Pour the dressing over the salad and stir well.
- Enjoy!
