Broccoli With Beef

Ingredients
- 1 lb broccoli
- 1⁄4 lb beef flank steak
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- 1⁄2 teaspoon pepper
- 3 tablespoons oil
- 1 teaspoon ginger, minced
- 1 teaspoon sugar
- 1⁄4 teaspoon salt
- 2 teaspoons brandy
Directions
- Cut florets from broccoli stems and set aside. Peel stems and cut into 2x 1/2" sticks. Bring a large saucepan of salted water to a boil. Add broccoli sticks and florets and cook until they turn a bright green color, about 2 minutes. Drain and rinse under cold running water, drain well. Slice beef into strips about 1/4" thick. In a small bowl, toss beef strips with soy sauce, cornstarch, and pepper. In a wok, heat 2 Tblsp. of oil over high heat until just smoking. Add beef and stir fry to desired doneness, about 2 minutes. Remove to a plate. Add 2 Tblsp. water to marinade bowl. Add remaining 1Tblsp. oil to wok; return to high heat. Add ginger and stir fry 2 seconds. Add broccoli, sugar, salt, brandy, and water in marinade bowl. Cover and steam 3 minutes until broccoli is tender and water has evaporated. Return meat to wok. Toss with broccoli to heat through and serve.
