Broccoli Summer Salad

Ingredients
- 1 bunch broccoli
- 1 medium cucumber
- 1 large tomatoes
- 1 medium red onion
- 1 cup grated cheddar cheese
- 1⁄4 cup oil
- 1⁄4 cup wine vinegar
- 1 teaspoon garlic, minced
- salt and pepper
Directions
- Cut broccoli into bite size pieces.
- Cook in boiling water 2 to 3 minutes.
- Drain and run cold water over it to stop the cooking.
- Peel and slice the cucumber.
- Cut the tomato into bite size pieces.
- Mix together and add cheese.
- Mix together dressing ingredients and pour over salad.
- Toss to coat.
- Chill until ready to serve.
