Broccoli Stilton Soup

Ingredients

• 2  tablespoons coconut oil
• 1  tablespoon butter
• 1  onion, diced
• 1  garlic clove, minced
• 2  cups broccoli stems, grated
• 8  ounces  chicken stock
• 1⁄2 cup Stilton cheese, grated

Directions

1. heat oil and butter in sauce pan.
2. add onion and garlic - saute.
3. add stock and grated broccoli - cook on low for about 25 minutes.
4. add stilton, stirring until melted.
