Broccoli Salad

My boyfriend is in the army and this year for the x-mas party we were to bring a cold side dish. I knew there would be all the typical side dishes and I wanted something different. I came up with this after thinking about my four favorite salad ingredients and how I always end up eating them first. This recipe can be doubled or even cut in half depending on what you would need it for. I recommend making it the morning or night before serving. Enjoy!! Show more

Serves: 8-12

Ingredients

  • 4  cups broccoli florets
  • 1  cup carrot, shredded
  • 12 cup cheddar cheese, finely shredded
  • 1 12 cups  chow mein noodles
  • 1  cup mayonnaise, Hellman's works best
  • 2 -3  tablespoons  hidden valley ranch dressing mix, about half the packet

Directions

  1. in a small bowl, mix mayo and ranch seasoning together and reserve.
  2. in a large bowl, combine broccoli, carrots, and cheese.
  3. add couple spoonfuls of the dressing at a time to the veggies until well coated. you may have leftover dressing that can be used for snacking.
  4. refrigerate until ready to serve.
  5. right before serving, gently mix in the chow mien noodles.
