Broccoli Cheese Soup

Ingredients
- 1⁄2 cup onion, chopped
- 1⁄4 cup flour
- 2 cups fat free chicken broth
- 1 1⁄2 lbs broccoli
- 1 cup carrot
- 1⁄4 teaspoon nutmeg
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper
- 1⁄4 teaspoon Pam cooking spray
- 2 cups milk
- 1⁄4 cup unsalted butter
- 6 ounces cheddar cheese
Directions
- Saute onion in PAM, set aside.
- Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and add milk.
- Add Chicken broth, simmer for 20 minutes.
- Add broccoli, carrots, onions. Cooker over low heat 20-25 minute (I used the pressure cooker for 10 min.).
- Add salt and pepper. Puree in blender. Return to heat, add cheese and nutmeg.
