Broccoli Cheese Soup

Ingredients
- 1⁄4 cup butter
- 1⁄2 cup finely diced onion
- 1⁄2 cup finely diced celery
- 1⁄2 cup grated carrot
- 1⁄4 cup flour
- 1 1⁄2 tablespoons cornstarch
- 1 quart chicken stock
- 1 quart milk
- 1 1⁄2 lbs cubed American cheese
- 2 tablespoons dried parsley flakes
- 1 pinch red cayenne pepper
- 10 ounces frozen broccoli (thawed)
Directions
- Saute vegetables until tender.
- Add flour, stir until foamy.
- Add chicken stock and milk. Stir. Add cornstarch, cubed cheese, parsley and pepper.
- Heat through.
- Add thawed broccoli.
- Heat through and serve.
