Broccoli and Sun-Dried Tomatoes Pasta

Ingredients
- 1⁄2-2⁄3 cup sliced sun-dried tomato (not oil-cured)
- 10 -12 ounces pasta, I used multi-colored rotini
- 2 -3 cut broccoli florets
- 2 1⁄2 tablespoons extra virgin olive oil
- 1⁄2 cup grated fresh parmesan cheese
Directions
- 1. If the sun dried tomatoes are dry; it would be best to soak them in hot water for about 10 mins and drain, just so they are moist.
- 2. Cook the pasta you choose, in the way the package instructs you to.
- 3. Steam the broccoli in a steamer on the stovetop or in a microwave, using a little bit of water in a bowl and cover. Make sure that the broccoli is soft in the center but crisp just a little, and then drain the water.
- 4. Mix the pasta and broccoli in a bowl. Add the olive oil, sun-dried tomatoes, and parmesan cheese together. And mix for a very simple but tasty pasta recipe! Feel free to add your own seasoning/ fresh herbs!
