Blueberry Pancakes

Ingredients
- 1 1⁄4 cups all purpose flour
- 1 1⁄4 cups whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 tablespoons vegetable oil
- 2 eggs
- 2 cups plain yogurt
- 1 1⁄4 cups 1% milk or 1 1⁄4 cups skim milk
- 1 1⁄2 cups fresh blueberries or 1 1⁄2 cups frozen blueberries
- vegetable oil cooking spray
- maple syrup (optional) or confectioners' sugar (optional)
Directions
- Combine flours, baking powder and baking soda in a bowl.
- In a separate bowl mix together oil, egg, yogurt and milk. Add yogurt mixture and mix with the flour mixture and stir until combined. Fold in blueberries.
- Spray skillet lightly. Spoon small amounts of batter on skillet. Cook evenly. When bubbles appear on top and bottoms are slightly browned, flip.
- Optional serve with small amounts of maple syrup or confectioners' sugar.
