Blueberry Orange Yogurt Cake

Ingredients
- 1 cup white flour
- 1 cup whole wheat flour
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon baking powder
- 1⁄2 cup butter, softened
- 1⁄2 cup white sugar
- 1⁄2 cup brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 orange, zest of
- 1 cup nonfat plain yogurt
- 1 cup fresh blueberries
Directions
- Preheat oven to 350°F.
- Coat loaf pan with non-stick cooking spray.
- Whisk together dry ingredients.
- Cream butter until light.
- Beat in sugars.
- Add vanilla and eggs, one at a time, beating until light.
- Add dry ingredients to butter mixture, alternating with yogurt in three additions.
- Stir in blueberries and zest.
- Pour into prepared pan and bake one hour, until toothpick inserted in center comes out clean.
