Blueberry Oats to Go

Yields: 12 Oatmeal Cupcakes
Ingredients
- 2 cups old fashioned oats
- 3 tablespoons flour
- 1⁄3 cup packed brown sugar
- 1 1⁄2 teaspoons baking powder
- 1⁄4 teaspoon salt
- 2 eggs
- 3⁄4 cup skim milk (1% same points essentially)
- 1⁄2 cup nonfat yogurt (I use Fage Total 0%)
- 1⁄2 teaspoon vanilla
- 3⁄4 cup blueberries (fresh)
Directions
- Heat oven 350.
- MIx dry ingredients in a bowl (oats, sugar, salt, flour, baking powder).
- Mix wet ingredients and in another bowl; whisk to combine (Eggs, yogurt, vanilla, milk).
- Mix wet into dry.
- Fold in Blueberries.
- Bake for 22 - 25 minutes until toothpick comes out clean.
