Blueberry Muffins

Ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1⁄4 cup brown sugar
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 egg, whisked
- 1⁄3 cup canola oil
- 1⁄2 cup plain yogurt
- 1⁄2 cup milk
- 1⁄2 cup apple juice
- 1⁄2 cup applesauce
- 2 teaspoons lemon extract
- 1 cup blueberries
Directions
- In a large bowl, combine the first 7 ingredients. Set aside and preheat the oven to 400°F.
- In a smaller bowl, whisk egg. Add the yogurt, juice,applesauce and lemon extract to the egss and mix well.
- Add egg mixture to the dry ingredients and blend together. Gently stir in blueberries into the muffin batter,.
