Black-Eyed Peas

Ingredients
- 1 lb black-eyed peas
- 6 cups water
- 3 chicken flavored bullion cubes
- 1⁄2 cup celery, chopped
- 3 onions, chopped
- 4 garlic cloves, sliced
- 4 tablespoons coconut oil
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon liquid smoke
- 2 bay leaves
Directions
- heat coconut oil in pot over medium heat.
- add onions, celery, and salt. cover and sweat for five or so minutes, until vegetables begin to turn translucent.
- add garlic and continue cooking for two more minutes.
- mix in remaining ingredients and bring to a boil. cover and simmer over low heat for 45 minutes, or until beans are tender.
- serve plain or over rice.
