Black-Eyed Pea Hummus

Yields: 3 1/2 cups
Ingredients
- 3 minced garlic cloves
- 1⁄2 cup fresh lemon juice
- 1⁄3 cup tahini (sesame-seed paste)
- 1 teaspoon ground cumin
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon paprika
- 2 (15 1/2ounce) black-eyed peas (drained and rinsed)
- green onion top, snipped for garnish
Directions
- In a food processor combine all ingredients and process until smooth. Scape down sides, if necessary, and process again.
- Transfer to serving bowl and garnish with snipped green onion tops. Serve with your favorite choice of crackers, tortilla chips and/or vegetables.
