Black Bean Smoked Spicy Sausage Casserole

Serves: 4

Ingredients

  • 1 (19 ounce) can black beans, drained &, rinsed
  • 1 (5 ounce) can  italian tomato sauce
  • 1  large fresh tomato, chopped
  • 4  garlic cloves, crushed
  • 2  tablespoons  hot sauce (I used ",Denzil's Kamikazi",)
  • 14 cup  sweet green pepper, chopped
  • 14 cup  sweet red pepper, chopped
  • 1  medium onion, chopped
  • 2  tablespoons brown sugar or 2  tablespoons brown sugar substitute
  • 1  lb  your favorite  spicy smoked sausage, cut in bite size slices

Directions

  1. Preheat oven to 350°F.
  2. Mix all the ingredients together in an oven proof casserole dish.
  3. Cover & bake for 1 hour, uncover and continue baking for another 1/2 hour.
