Betsy’s Best Berry Waffle Recipe

Ingredients
- 1 1⁄2 cups gluten-free flour, mix
- 1 1⁄2 teaspoons baking soda
- 1⁄8 teaspoon salt
- 1 teaspoon baking powder
- 1 egg
- 1⁄2 cup fresh berries
- 2 tablespoons sugar or 2 tablespoons honey
- 3 cups buttermilk
- 1 cup sour cream, sweet cream or 1 cup plain yogurt
- 1⁄4 cup gourmet peanut butter
- berries (to garnish)
Directions
- Combine the dry ingredients.together the egg, sugar, buttermilk and yogurt. Stir in Betsy’s Best. Add to the dry ingredients and blend together.
- Batter should be light and creamy. If batter is too thick, add additional milk to thin.
- Let batter stand for 2-3 minutes. Pour batter into waffle iron and cook according to directions. Garnish with berries and enjoy!
