Beer Cheese Soup

This is a family favorite picked up by my mom years ago. It was in a handout from an Ohio Swiss Colony handout. Enjoy! We love this recipe. (Because they wouldn't let me use "envelope" as a measurement, I omitted it but the soup mixes are all envelopes of dry soup mix.) Show more

Serves: 4-6

Ingredients

  • 1  celery soup
  • 1  leek soup mix
  • 12  French onion soup mix
  • 5  cups water
  • 1  lb sharp cheddar cheese (cut into cubes)
  • 6  ounces beer, at room temperature

Directions

  1. Combine all soups mixes and water and simmer on medium until thick. Slowly add cheese, stir until smooth and add beer. Serve. Leftovers can be frozen and thawed in fridge.
