Baked Zucchini and Cheese

Directions

  1. Preheat oven to 350F.
  2. Combine zucchini, onion and bacon.
  3. Gently stir in cheese, flour, eggs, baking powder, salt and pepper.
  4. Mix until well combined.
  5. Turn into a well buttered 10x6x2 or equivalent baking pan. Instead I use silpat.
  6. Bake for 40-50 minutes or until golden brown.
