Baked Guilt-Free Cheesecake

Ingredients
- 2 eggs
- 4 egg whites
- 1 teaspoon artificial sweetener
- 1 teaspoon vanilla extract
- 3 cups 1% fat cottage cheese
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 2 cups strawberries
- 1 1⁄2 cups graham cracker crumbs
- 1⁄4 cup artificial sweetener
- 5 tablespoons melted light margarine
Directions
- Mix the graham crackers and artificial sweetener, then add margarine and mix with a fork until completely moistened.
- Press mixture into the bottom and up 1/3rd of the side of a 9-inch springfoam pan.
- Refrigerate for 1 hour.
- Preheat oven to 350°F.
- Blend eggs, egg whites, artificial sweetener, and vanilla extract.
- Gradually add cottage cheese until very smooth.
- Pour on top of graham cracker crust and top with cinnamon and nutmeg.
- Bake for 45 minutes or until firm.
- Turn off oven but leave cheesecake in for one hour with the door open.
- Chill overnight.
- Top with crushed strawberries before serving.
