Bacon, Lettuce and Tomato Salad

Serves: 4-6
Yields: 1 salad
Ingredients
- 1 lb bacon, cooked and crumbled (I usually bake)
- 1 head romaine lettuce, chopped
- 1 pint cherry tomatoes, halved
- 2 heads broccoli, cut into florets
- 1 red onion, med., thinly sliced
Dressing
- 1 cup mayonnaise (low fat)
- 1⁄2 cup parmesan cheese, grated
- 1 tablespoon sugar
Directions
- In a glass bowl, layer first the bacon, romaine, tomatoes, broccoli and finally onion.
- In a separate med. bowl, combine dressing ingredients.
- Spread the dressing over the top and to the sides of the bowl.
- Cover with Saran wrap and refrigerate for at least 12 hours or overnight.
- Just before serving, mix the dressing into the salad.
- Delicious.
