- 2 cups Baby Spinach
- 1⁄2 cup fresh blueberries
- 1⁄2 cup cooked lentils, rinsed (canned)
- 1⁄4 cup walnuts
- 2 hard-boiled eggs, sliced
- 2 tablespoons honey mustard dressing (Simple Honey Mustard Salad Dressing or use Newman's Own Lighten Up Honey Mustard Dressing)
Directions
- Toss together spinach, blueberries, and lentils; top with walnuts and egg slices.
- Drizzle with dressing.
