Ingredients
- 2 cups baby arugula
- 1⁄4 cup dried tart cherry
- 1⁄2 red bell pepper, sliced into thin strips
- 1 ounce goat cheese, crumbled
- 2 hard-boiled eggs, sliced
- 2 tablespoons honey mustard dressing (Simple Honey Mustard Salad Dressing or use Newman's Own Lighten Up Honey Mustard Dressing)
Directions
- Toss together arugula, cherries, and bell pepper strips; top with cheese and sliced eggs.
- Drizzle with dressing.
