Arkansas Black-Eyed Pea Salad

Sweet oil and vinegar based salad. Quick and pretty!

  1. Drain the peas, beans, and pimento. Chop onion and pepper, I add them to the pea mixture to look the prettiest, it's all to taste. Add oil, vinegar, sugar, salt, and pepper-stir gently. I let it sit at least a couple of hours to overnight.Can be made ahead of time. It travels well and is a crowd pleaser.
