Apple Spice Cake

Ingredients
for Topping
- 1 cup old fashioned oats, uncooked
- 1⁄2 cup packed brown sugar
- 1⁄2 teaspoon ground cinnamon
- 1⁄4 cup butter, softened
for Cake
- 1 (18 1/2ounce) package spice cake mix
- 1 cup old fashioned oats, uncooked
- 1 cup plain low-fat yogurt
- 3 eggs
- 1⁄4 cup vegetable oil
- 1⁄4 cup water
- 1 1⁄2 cups finely chopped apples (about 2 medium)
Directions
- 1. Heat oven to 350. Spray 13x9 inch metal baking pan with nonstick cooking spray.
- 2. For topping, combine oats, brown sugar, and cinnamon in medium bowl. Cut in butter with 2 knives until mixture is crumbly. Set aside.
- 3. For cake, combine cake mix, oats, yogurt, eggs, oil, and water in large bowl. Blend with electric mixer at low speed until moistened; mix at medium speed 2 minutes. Stir in apples. Pour into pan. Sprinkle topping evenly over batter.
- 4. Bake 40 to 45 minutes or until wooden pick inserted in center comes out clean. Serve warm or at room temperature.
