Anne's Tabouli

Ingredients
- 1 cup Bulgar wheat
- 6 -8 green onions, thinly sliced
- 1 1⁄2 cups chopped parsley
- 1⁄4-1⁄2 cup of fresh mint, finely chopped
- 3 large tomatoes, chopped
- 3 lemons, juice of
- 1⁄3 cup olive oil
- salt and pepper
Directions
- Rinse bulgar and soak in water to cover for about 2 hours.
- Drain and add the rest of the ingredients.
- Mix well and refrigerate for at least an hour prior to serving.
