Amazing Light Whole Wheat Blueberry Pancakes

Ingredients
- 1 1⁄3 cups whole wheat pastry flour
- 1⁄2 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1 1⁄2 teaspoons baking powder
- 1 large egg
- 1 cup skim milk
- 1 tablespoon vegetable oil
- 1⁄2 cup nonfat yogurt
- 1⁄2 cup blueberries (or fruit of your choice)
Directions
- Sift dry ingredients into a large mixing bowl.
- In a separate bowl, whisk the egg, milk, oil and yogurt together well, then add to dry ingredients.
- Stir until just combined then fold in blueberries.
- Fry pancakes on a hot oiled pan or griddle on medium high heat, wait until top is filled with bubbles to turn, turning once. Makes 6 pancakes.
