Pronounced: KAR-ah-meh-lyz, KEHR-ah-meh-lyz
Nutrition

To heat sugar until it liqufies and becomes a clear syrup ranging in color to a dark brown, or to sprinkle sugar on top of food and placed under a heat source until the top forms a crust, or to heat foods until their natural sugars come out and form a brown crust on the food (not the same as burning the food though).
