I have been vegan since April 2007 for a number of reasons mostly for the well-being of animals. I've noticed a lot of improvement on my health and especially now I don't have to worry too much about controlling my diet or watch my weight! Eating healthy becomes second nature when you're a vegan, I think! I believe that what we eat affects our health, emotions and physical ability. Food to me is a sacred joy. Cooking to me is a gift. It is a stress-relief process every time I cook. I cook for my family, my boyfriend and friends and want them to enjoy the taste as well as the health benefits. A healthy vegan diet is not boring at all to me. I would say vegan cooking is indeed very creative!
