I like to cook, and I LOVE to bake. After substantial weight loss - finding ways to make baked goods wholesome and filling has been a mission. Almost any recipe I try, I tweak with egg substitute, yogurt spread, sweeteners, healthier oils (pureed avocado in chocolate cakes anyone?), and substitutes for traditional white flour (Black beans in brownies, chickpeas in cookies...). I'm not a nutritional purist, but if I can add a little something to a baked good that will fill me up and be a tad heart healthier, it makes me feel better about indulging and serving it to my loved ones. I add milled flax seed and oatmeal to almost any pancake or baked good I can swing! My recipes are tested on my husband, my friends' children (who typically cannot detect my deceptive recipe tweaks), and my father - the world's pickiest eater (also not able to detect my healthy tweaks). I enjoy nutbutters, chocolate, and any combination thereof.
