Originally from Barbados, grew up on British/Barbadian cuisine. Love seafood, fish and desserts the most, anything with spinach and goat cheese. Immigrated to Canada in my late 20s. Husband is Sicilian born and we had the tastiest food on a recent trip there. I used to bake a lot as a teenager/early 20s but in an effort to maintain normal weight I rarely bake anymore. Discovered this website when we wanted to replicate Ricciarelli - an almondy cake-like cookie we fell in love with while in Tuscany. Found an excellent version #150726 which I tweaked slightly, extra egg white and bake less time.
