    Kitchen Dictionary: fava bean

    Pronounced: FAH-vuh

    A tan flat bean which looks like an overgrown lima bean. The large pod is inedible, unless very young. Habas are dried fava beans with the skins removed.

    Season: available year-round

    How to select: Available dried, canned or fresh. Choose fresh fava beans that are not bulding with beans.

    How to prepare: Blanch them first to remove the tough, inedible outer shell.

    Matches well with: bacon, butter, cilantro, cream, garlic, ham, leeks, lemon, mushrooms, olive oil, parsley, Pecorino cheese, rosemary, sage, salt, savory, spinach, thyme, vinaigrette
