    Kitchen Dictionary: amaretto

    Pronounced: am-ah-REHT-toh

    amaretto

    A liqueur with an almond flavor, but that may or may not contain almonds. The standard base of the liqueur is primarily made from apricot pits, and variations may contain added spices and flavorings. The original version was made in Saronno, Italy. Amaretto is Italian for "a little bitter."

    Ethnicity: Italian Ingredient

    Season: available year-round

    Substitutions: 1/4 - 1/2 tsp almond extract (+ water, white grape juice or apple juice to get the specified amount of liquid, when liquid matters) = 2 tbsp amaretto
