    This is a sweet cucumber pickle. These pickles stay crisp for up to a year in the freezer. They are so easy to make and very good. I have just defrosted a bag (pictured here) after 8 months in the freezer and they are still as crisp as the day I made them.

    Cucumbers with a kick! Makes a great side dish to any Chinese meal. I'm not too sure about the amounts of soy sauce, wine, and vinegar, because I usually just wing it, but they should be in equal parts. Because the cucumbers taste best when marinated overnight, I like to use a low-salt soy sauce. I learned this from my mother and make it about once a month during the summer, when Japanese cucumbers are available. You will probably have to get them from an Asian market, as I've never seen them at major supermarket chains.

    Who's have thought about sauteed Cucumber? Try this for something different, elegant and tasty. Borrowed and adapted from a book called "Salads and Summer Dishes".Note: Now that I have been making this a while I thought I'd pass some tips... using dried rosemary results in less flavour, fresh gives more, but it's a bit of a "tough"herb, so I put it in with the onion and slow and *gently* saute them both. when adding the sour cream, be careful because if the mix is too hot it will split a little and presentation will be less, but even if it splits, don't worry the favour of the infused rosmary in the sour cream is wonderful... I even used my fingers to get the last of it onto the cucumber! And the cuccumber itself? Wow I am very pleasently surprised, I hope that you try this and share a whole new delicious way of eating cuccumber. ZWT REGION: France.

    This recipe comes from “The Ballykissangel Cookbook”. Ballykissangel is the fictional Irish village in the popular BBC TV drama series of the same name, that was on air a few years ago. I’m not a big soup fan, but this one sounds really interesting, especially as it can be served hot or cold. The original recipe calls for chicken stock, but then that wouldn’t be very vegetarian (!), so I’ll leave it to you what sort of stock you use. Hot and cold serving suggestions are at the end of the cooking instructions, but either way I think this would be a good alternative to gazpacho. You’ll need to add extra time for chilling if serving this cold.
