    These salads helped me lose 70 pounds ... I found that if I always had one or two in the refrigerator, I always had a yummy, low-fat meal waiting for me. They're all WW friendly, and range from 0-3 points per serving. I included the world's best ratatouille recipe in here, because I like to eat it cold. I tweaked all recipes by using fat-free dairy products or mayo instead of full-fat or low-fat; I tended to cut back on oil (but not on vinegar). Specific recommendations for lowering fat/calories appear in my reviews of individual recipes.

    From A Slice of Paradise. This has been a regular at our house for years. It can be made well in advance. It's quick and easy to assemble for an everyday dinner and pretty enough for a dinner party. I often substitute verjuice for the vinegar. Serve cold.

    When I arrived in Iceland, this was my DH’s 1st food request & I went thru a lot of RZ cucumber salad recipes to be sure it wasn’t a duplicate. Siggi & my sister named this because it was original w/me & because of my twissis internet identity. For best results, don’t make this a dy ahead, but do allow at least 2 hrs for the flavors to blend & the “cream” to develop from the finished ingredient mix. I promise you’ll like this.     Found this on a diabetic website while surfing for healthy salads to make ahead and take to work. Since my Mom developed Diabetes I have an interest in finding healthier recipes to put into our diets. You could really add or substitute just about any vegetable you wanted. Bulgur comes from wheat. It is actually the kernel of wheat, cracked for cooking. It has a nutty, chewy flavor, and contains fiber. Olive Oil is a healthy choice for vegetable oil. This recipe is fiber rich and full of Vitamins and Py!

    This is the most delicious coleslaw that you will ever have! I make this for weddings, large socials and in the summer for BBQ's and parties, and there is never anything left it all goes and everyone wants the recipe --- plan ahead the coleslaw needs to be refrigerated for the stated time to blend the flavors, this coleslaw will intensify in flavor with chilling time --- this is not a thick heavy dressing like some other coleslaw recipes it's the perfect texture and flavor and what makes this coleslaw stand out from all others is the fresh lemon juice so please use only fresh I have used bottled in the past and it is just not the same --- the dressing amount will yield enough for two 16-ounce packages prepared coleslaw mix or 1 head of green cabbage --- for one 16-ounce package prepared coleslaw mix use the dressing amounts posted on bottom of recipe and add in 3 or more large of chopped green onions.
