I love hominy, but many people these days don't seem to even know what it is, and often a lot of folks think they don't like it. Well, after they taste it served this way, there's a very good chance they'll change their minds. :)

Here is the recipe I use for Zucchini Madelaines. I got it out of Sunset Magazine many years ago. We just love it. I make it every year when zucchini is plentiful, and it freezes well. I serve it as an appetizer, with other munchies. It is like a bread and also goes well with soups.
This recipe is the product of the "I need to go to the grocery store, but don't have time" syndrome. It is a sweet, flavorful rice that is so easy to make. A quick side dish that goes well with meat, poultry, or fish. Even my "Picky Panel of Judges" (A.K.A. "Guinea Pigs") liked it!!
This recipe was originally one of Martha Stewart's but I've adjusted it to make it more to my taste. This has become my DH's favorite vegetable recipe. In fact, we love it so much that the two of us usually pig out on the whole recipe.
