    Delicious – a veggie pizza that meat eaters will actually love! The Mediterranean flavors and cheeses make it filling without the traditionally overwhelming “healthy” garden taste. If you chop and marinate the vegetables in advance, dinner can be ready in just 15 minutes. Now that’s a blessing from the Greek Gods!

    Traditionally, tuna steaks are not cooked rare or medium in the Mediterranean, however, it is my preferred way of eating them, so this recipe leans toward that technique. You can certainly cook it until its well done, but the taste and texture will be very different. Don't let all the steps deter you, its really a very simple recipe to put together. This recipe is an entry for the Ready Set Cook contest #7.

    A rich moist spice cake that is great served by itself or topped with a scoop of ice cream. This cake gets moister and the flavor is better after it sits overnight; but is also delicious freshly made.

    This is far from the traditional tuna salad. This tastes like summer if you use garden fresh tomatoes. A great lunch idea and can be made ahead. I served this with crunchy bread sticks and fresh fruit. Created for RSC #6 Contest.

    This dish may be your main entrée served with Pita bread or other Mediterranean flat bread. If it is your main entrée, you may wish to allow two pepper halves per person depending on their appetite size. It is beautiful served as part of a buffet and lends itself well to a Brunch, Lunch or Dinner party. Prepare ahead for those busy days and pop it into the oven 45 minutes before your family dinner time. A side salad goes well with the peppers.

    You and your friend are enjoying a spectacular sun set while eating at a quaint outdoor café on the Greek Island of Mykonos. The sun is now low on the horizon, a bright orange and the summer breeze is so delightful. You had a tasty shrimp appetizer and a delicious cold yogurt soup. For an entrée you have decided to get the "signature" dish at this café, which many have said is one of the best on the Island. A charcoal grilled Tuna Steak on a bed of Couscous with orange slices, kalamata olives and feta cheese on the side…. A nice bottle of white wine to go along. What more can you ask for! All right, how about a RSC #7 strawberry, chocolate dessert… perhaps it's on the menu. Enjoy!

    The orzo is prepared similarly to risotto, so it has an extra creaminess. The feta gives a suprise "twang," that you might not otherwise expect. This is rich, full dish that is lovely to serve to family or company.

    Don’t let the number of ingredients fool you; this is pretty simple to make. The majority of the ingredients are just for the 1/3 cup Italian dressing that is mixed with the flour for the crust. Save the yummy sauce the shrimp is cooked in to sop up with crusty bread. This is a one-dish meal that really needs no accompaniment. You can serve it with plain yogurt or sour cream for some extra creaminess.

    This is an easy casserole to put together. It may be a complete meal or serve it with your favorite meat. I use canned chunky Italian tomatoes that already have basil, oregano & garlic in them. If you use this type of canned tomato omit the basil, oregano and cut the garlic back to 3 cloves. Salting the eggplant does not make the recipe salty it simply removes moisture from the eggplant- most of the the salt flows out with the moisture.

    This is a variation of a recipe I came up with years ago. Because the ingredients are combined while the pasta is still warm, the dressing really soaks in and some of the cheese melts, leaving a creamy texture. I usually have a little bit of the dressing left over, which I save for spinach salad later. Hope you enjoy!

    If you love hummus, you will enjoy this version very much. If you don't love hummus, you will still enjoy this sweet, savory dip/spread because the flavor of the roasted onions, peppers and eggplant shines through. You can make this dip ahead of time as it keeps well for several days in the refrigerator, but please bring it to room temperature or warm slightly before serving with pita chips or as a wonderful sandwich spread.

    "SHAZAM! this shrimp is good!" is what one dinner guest said when I served this at a small dinner party to test this recipe. This is created for a romantic dinner for two. Easy prep that can be done ahead of time and the smell of the flash pan-seared shrimp will drive your dinner companion wild. Created for RSC #7. ETA- I designed this dish to be SIMPLE to make for inexperienced cooks. You could certainly make it much more gourmet by roasting the peppers and using fresh tomatoes and herbs. It won't hurt my feelings.
