    Economical meals?

This picture is of our kichen remodel. During this and many other times when I'm down to the last $50 for groceries and wondering what I can do with the money for a week or more to make it stretch, I look to these recipes. These were suggested by people in the OAMC/Budget forum as being inexpensive...some are regionally more expensive for me but most are great!

This is a great way to have free time while hosting a party!! The prep time is all the work. And can be done the day before. You can serve it over Rice topped with cheese or roll it into a wrap, a side of sour cream, salsa, and sliced avocados. You will like this thick and spicy dish.

I received this recipe from Carolina Rice. It's a nice and hearty soup. RICH! (African touch with the sweet potatoes and beans)!

This is easy and spicy. You already have the ingredients in your cabinet so give it a try! Serve it with chip or put it into a tortilla wrap. You can use 1 can green chilies in place of jalapeno's.

This is a hearty, thick soup! You can even say Stoup! Meatless! Good for those trying to avoid meat! The lemon bring an other flavor to it! Using can beans makes this quicker then fresh but if you have the time go for the dried beans.

Refreshing! Light! Great way to use that last cob of grilled corn. Gives the dish a light smokey flavor. Good for picnics, camping,& pot luck. Makes a good side as well as a meal. Using it as a relish to top grilled salmon or tuna. Try dipping tortilla chips into it.

You can't beat making soup start to finish in 10 minutes. This is easy no peeling and very quick great main meal or snack! And you don't cook out all the vitamins because it's not simmering on the stove for hours.Clean up is easy just the Vita-Mix.The results are hot which you can't get in a blender or food processor. The first half becomes smooth and cream while the second half added on low speed gives the soup texture. Oh almost forgot thanks to Alan Hall for the recipe, the guy that sold me the machine.

This was my first time having this type of beans. They reminded me of white navy beans. The bacon and smoked turkey wings give this dish a nice smokey flavor. Epazote has a flavor similar to coriander. It is also called Mexican tea or wormseed. I found this dried in Mexican specialty store This is great with beans because it works to reduce gas. This is a very fragrant and flavored herb that takes some time to get used to. Like cilantro, it has a tenacity that is best mellowed by cooking. Its pungency is well complimented by beans, and it has a mellowing effect on other intense spices. Use of this herb dates back to Aztecan times. Name changed by request of Jen.

The pork and beans and honey mustard gives this comfort salad a nice sweetness. The potatoes and beans give this salad a creaminess with crunch from the red peppers, celery and onions. This you will enjoy! Bring for a pot luck or to a picnic.

This is easy and few ingredients with lots of flavor! You can wrap them in tortillas or serve it with tortilla chips as an appetizer. In the picture is a bowl and tortillas filled with this mixture which I also added 1 diced small tomato.

This fast and easy one-dish meal has been a favourite after-work supper recipe at our house for years! (Originally from a recipe in an ad for the American Potato Marketing Board.)

    Recipe #50595

I found this recipe in the newspaper today. I have been using Bec's Hamburger Skillet Supper, for a long time. But this one has a few different things added into it. I just love the ramen noodles. I also add an extra cup of veggies when I make mine.

If you are from the Rochester area that phrase would make your mouth water. This is any drunk college kids best friend. It is a mixture of meat, carbs, and more carbs piled onto a foam container found in Nick Tahou's and "hots" food joints all over the Rochester area. For about 6 bucks (including tip) you get this plate plus a soda, not too shabby. They have a veggie version, fish, and my favorite--the white hot version. When I left the Rochester to go to school the first thing I would do when I came home was got to a "hots" and order a garbage plate. Also dont expect to finish this unless you are drunk. For more info on this delicious dish go to wikipedia.org and search garbage plate. (I put the direct link on here before but it messed up the rest of the recipe for some reason, so youre gonna have to do it the hard way lol) Also times are approx. if you make your own sauce or not. Also to speed things up I use Recipe #226112 for the potatoes. This recipe is scaled to one, but it can really feed at least four people.... but whats the fun in sharing a garbage plate??
