    I modified this recipe from a tea smoked chicken recipe in one of my cookbooks. My husband dubbed it "evil" chicken because he couldn't stop eating it. I find it turns out best when you use a whole chicken. However you can substitute boneless breasts. I serve with steamed rice and broccoli.

    This recipe is from Craig Claibourne's New York Times Cookbook, and I think it's one of the best recipes I've ever tried. It looks beautiful, I love the flavors, and in my opinion, well worth the work. Don't leave out or substitute for the whole bottle of lemon extract added at the very last second; it's what makes the dish. If you cannot find water chestnut flour or powder, you can substitute cornstarch. However, the texture will not be as crispy or nutty.

    Found this recipe in a Butterball chicken advertisement. Made it on the grill and it is very easy. To prevent charring, pound the chicken breasts to uniform thickness. Prep time includes marinating time.
