    Avocado

Avocados are a delicious fruit have a smooth creamy texture, and high energy quality. Avocados are high in iron and copper, which help red blood cells to regenerate and prevent anemia, loaded with fiber, vitamin E and potassium, antioxidant lutein, and monounsaturated fat (the good kind)the same hearty-friendly fat found in olive oil and nuts. Avocados also contain another beneficial substance: a plant sterol called beta-sitosterol, which can reduce LDL (bad) cholesterol in your bloodstream. The Aztecs in Mexico referred to the avocados as "testicle tree", not only because of its appearance, but also due to its ability to "excite sexual passion." Studies have shown avocados effect on lowering cholesterol when consumed regularly. They have also been proven to protect against liver damage. Avocados have a laxative quality as well. They soothe the digestive tract. When a regular part of your diet they improve hair and skin quality too.

Refreshing, quick and easy. Use as a salad or salsa. Fill a wrap, top a plate of greens or grilled fish, meat or chicken. The frozen corn chills the salad down which adds to the refreshing taste for hot summer days! You can go mild or kick it up with a jalapeno or smokey chipotles! Yes, parsley can be use in place of the cilantro.

Thanks to Dr. Weil for this recipe. For a quick and exciting meal, this healthful version of a popular Mexican dish is hard to beat. The baked tofu neatly replaces beef and, along with olive oil, provides good fat. Nonfat whole-wheat tortillas make very good fajitas. They have none of the hydrogenated fat of conventional white-flour tortillas and give you some fiber.
