Zucchini Walnut Pesto

"This is my own concoction that was born out of the Dining on a Dollar Contest (this was not submitted as part of a contest entry). Serve with grilled chicken or mix with pasta or rice."

• Ingredients: 7
• Yields: 1 cup

ingredients

• 1 cup zucchini (quarter-inch dice)
• 1 garlic clove
• 1⁄4 cup walnuts, chopped
• 1⁄4 cup parmesan cheese, grated
• 1⁄4 cup flat leaf parsley
• 1⁄4 teaspoon salt
• 3 tablespoons grapeseed oil

directions

1. Combine all ingredients except oil in the bowl of a food processor.
2. Process until smooth.
3. Gradually add oil and continue processing until thoroughly mixed.
4. Serve with grilled chicken or mix with pasta or rice.
