DIRECTIONS

  • For the zucchini crust: shred two medium zucchini. Salt and drain at least 15 minutes. Rinse and pat dry. Mix with two eggs, 1 cup shredded reduced fat mozzarella, 2 cloves minced garlic, and fresh ground black pepper. Spread on a greased baking sheet (I used a pizza stone) and bake at 375F for 12 to 15 minutes, until light brown.
  • I topped with sliced tomatoes, green onions, and crumbled herbed goat cheese before broiling for a few minutes. Then I added a few fresh basil leaves.
