Zucchini or Squash Casserole

This is a very good side-dish that will use up much of your garden's zucchini in a delicious way.

ingredients
- 8 cups diced zucchini or 8 cups diced squash
- 1 large green pepper, chopped fine
- 1 large red pepper, chopped fine
- 1 large onion, chopped fine
- 1 cup sharp cheddar cheese, grated
- 1 cup stale breadcrumbs
- 1⁄2 cup olive oil
- 2 large eggs, beaten well
- 1 tablespoon dried basil, crumbled
directions
- Preheat oven to 350 degrees F.
- Combine all ingredients well in a large bowl.
- Transfer to a baking dish that you have first brushed with olive oil to prevent sticking.
- Bake for 45 minutes, or until top is browned lightly.

I loved this recipe. I made it last night and it was perfect. I changed a few things but that is jsut the way I am. I didn't really want peppers in my casserole so I left them out. I used cracker crumbs instead of bread because I had them. I also added celery and carrots. It was so pretty and tasted so good. Thank you for an addtion to my "keepers".Reply

This was very nice and a little out of the ordinary. I sauted the onion with some mushrooms before putting it all together. I like my veggies on the crispy side and thought the onions and mushrooms might not be cooked enough. I actually cooked it a bit too long and the vegetables were quite soft, so next time I will check it more often. It was very pretty and colourful and had a nice flavour.
