Zucchini or Squash Casserole

ingredients
- 8 cups diced zucchini or 8 cups diced squash
- 1 large green pepper, chopped fine
- 1 large red pepper, chopped fine
- 1 large onion, chopped fine
- 1 cup sharp cheddar cheese, grated
- 1 cup stale breadcrumbs
- 1⁄2 cup olive oil
- 2 large eggs, beaten well
- 1 tablespoon dried basil, crumbled
directions
- Preheat oven to 350 degrees F.
- Combine all ingredients well in a large bowl.
- Transfer to a baking dish that you have first brushed with olive oil to prevent sticking.
- Bake for 45 minutes, or until top is browned lightly.

I loved this recipe. I made it last night and it was perfect. I changed a few things but that is jsut the way I am. I didn't really want peppers in my casserole so I left them out. I used cracker crumbs instead of bread because I had them. I also added celery and carrots. It was so pretty and tasted so good. Thank you for an addtion to my "keepers".

OK, here goes. I live in Athens, Greece. I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages!
I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure.
So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call.
What did I do wrong?
Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths.
I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time.
