directions

  • Mix dry ingredients.
  • Combine oil and eggs with vanilla; add to dry ingredients, mix well.
  • Add zucchini, stir until combined well.
  • Fold in walnuts.
  • Place in greased 13x9 baking pan.
  • Bake at 350* for 40 minutes, or until pick comes out clean.

    Great taste, but I thought it was a little too moist, almost soggy. Seems to have a lesser amount of flour than some other recipes. I did replace some oil for applesauce, but I do that in all zucchini recipes and always have great results.

    Great cake!My husband and kids loved it.They hate zuchinni but ate the whole pan of cake.I also put a cream cheese frosting on it.The cake is great hot or cold!Real moist and delicious!!

    yum! i loooved it<br/>i a not givin 5 star coz i made a lot of my adjustments...i reduced the nuber of eggs to3 and also the oil by a half added i cup yought instead of those too felt dough was too runny so added a bit more of flour and anothe half tsp of baking powder..added a wee bit of carrot as well....i always reduce the sugar but i plan to have sugar and cinnaon topping for kids

    For those of you who like carrot cake, this one's for you. It is moist and delicious. I also put a cream cheese frosting on it and it is fantastic.A great way to use us some of the masses of zucchinis that are available right now.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
