Zucchini Au Bon Gout

ingredients
- 6 small zucchini
- 1 1⁄2 cups peeled chopped tomatoes
- 3⁄4 cup bread cubes
- parmesan cheese
- salt and pepper
directions
- Preheat oven 450°.
- Simmer zucchini till barely tender; drain.
- When cool, split in half and scoop out.
- Fry bread cubes till crisp.
- Mix with tomatoes.
- Stuff zucchini; sprinkle with cheese.
- Pop in oven till bubbly.

Yum ! I made these for a buffet lunch meeting and they went down a treat. I didn't have bread cubes available to buy here in NL so left them out and I don't think that the recipe suffered any for the ommission. I cut each of my zucchini into 3rds and then in half horizontally and these pieces were perfect as little serving each... quite a few guests came back for more. They were easy to prepare a few hours in advance and keep in the fridge until time to put them into the oven.
