  • Heat oven to 350°F.
  • Grease a 9 x 13 inch baking pan.
  • Mix all the ingredients together and spread in the pan.
  • Bake about 25 minutes until golden.
  • Cut into squares and serve warm.
  • These can be frozen and reheated for about 8 minutes in a 350°F oven.

  2. Wow, what a great flavour these zucchini appetizers had and they were really quick to make. A great way to serve zucchini. Next time I make this I will add an egg to the mixture. Thanks so much for sharing Kim.
     
  3. My mom makes this as well but calls it zucchini pie. 4 eggs are added and marjoram instead of oregano. The zuchini is greated along with a small onion (no garlic). Mix all together and grease a pie plate. Bake and cut into "pie" pieces. My two toddler daughters love this!
     
  4. Where the eggs omitted from this recipe? I've made this for years (and it's always been a big hit), but my recipe calls for 4 beaten eggs. Also, to make mixing easier, add the zucchini to the batter last. Then gently fold it in to coat well. Increase baking time to 35 minutes. I've also used broccoli and/or cauliflower instead of zucchini. Everyone loves it.
     
  5. I set these out when a group of friends came over...they were gone in no time (the appetizers, not the friends). Even a guy who hates zucchini loved them!
