  • Heat oil over medium-high heat in a large saucepan. When oil is hot, add onion, carrots, celery, red pepper, garlic cloves and cabbage. Stir to coat and saute for about 2-3 minutes, until veggies are softened but not browned.
  • Add quinoa and stir until mixed in with the vegetables. Saute for another 2 minutes.
  • Add tomatoes and broth and simmer on low-medium heat for about 20-30 minutes or until veggies are cooked to your liking. The longer you cook it, the more the quinoa will naturally thicken the soup.
  • When soup is done, stir in fresh basil and add salt and pepper to taste.

    This soup is fresh and colourful with a great veggie taste. YUM! However I felt it lacked some oomph, maybe one could up the basil, add some acidity and more garlic... I made half the recipe using only 2.5. cups broth as we like our soup on the thick side. l will make this soup again, but with added seasoning.<br/>THANK YOU SO MUCH for sharing your creation with us and good luck in the contest!<br/>Made and reviewed for Craze-E Fall 2011.

    I really enjoyed this soup. It was warm and comforting the day I made it, and it was so enjoyable. I also found this soup to be easily doubled, and it refrigerates very well.
