Yummy Orange Yogurt Muffins!

  • Preheat oven to 400 degrees F. Spray 18 muffin tins with non-stick spray.
  • In a large mixing bowl, stir together flour, granulated sugar, baking powder, baking soda, and salt.
  • Wash orange and cut in to eighths or smaller (I cut them that small to make the blending easier). Blend in food processor until the rind is very small. Add egg and blend until mixed.
  • In a medium mixing bowl add orange mixture with yogurt, oil, and vanilla.
  • Add egg mixture all at once to the flour mixture. Stir just until moistened.
  • Spoon batter into prepared muffin tins, filling each three-quarters full.
  • Bake in the preheated oven about 10 minutes or until tops of muffins are golden.
  • Cool muffins completely before adding glaze.
  • GLAZE:

  • In a small bowl, stir together powdered sugar and enough orange juice to make a glaze of drizzling consistency. Drizzle or brush glaze over muffins.
