Yogurt Cucumber Mint Cooler

"This drink is popular in Afghanistan where it is so very hot much of the year, and it's a very cooling and healthy drink, providing you like cucumbers and mint. Leave one or the other out if you prefer. If you plan to transport it a ways, I prefer to use whole ice cubes so they don't melt as fast. Another option is to drain the yogurt overnight for a thicker drink."

  • 1 cup plain yogurt
  • 1 cup cracked ice
  • 2 tablespoons finely diced cucumbers
  • 14 - 12 teaspoon crushed dried mint
  • 1 ice cube, with an embedded mint leaf (optional)
  • 1 cucumber, spear (optional)

  1. Thanks for sharing this recipe with us. It was simply GREAT, GREAT, GREAT! I have made yogurt drinks before, but never tried to use crushed ice. Did I say the recipe was GREAT! LOL It surely was. I added a lot of finely chopped cucumber and used my own home made yogurt (rich and creamy). Also, besides the crushed mint leaves, added salt. Later on I made a second batch and put it into the refigerator. SS
     
  2. I need to give you not 5 but 10 stars for this drink!! I halved this recipe and enjoyed this for lunch in the afternoon today. This is very refreshing. I used whole ice cubes for this. I've used 1 tbsp. whole diced cucumbers and 1/2 tsp. fresh mint leaves(finely chopped). Thank you for a wonderful drink to beat the heat!
